We are lucky enough to have a beautiful fig tree in our garden. At this time of year we love enjoying fresh green figs from our tree, with the bright red centre. Sometimes we have more than we can handle so I was looking for an ice cream recipe to use figs. Most of them use the brown mission figs, but thought i’d give this one a go. I haven’t use Love and Olive Oil before, but was pleasantly surprised.

 

This recipe used a lot of figs, in a Philadelphia style ice cream. With eggs at a premium i’ve been sticking to this style lately – plus it’s easier! I happily cut up all my figs and cooked them with the lemon and sugar – making almost a fig jam. Once cooked then cooled I could add the cream and vanilla. Our blender is broken so it was done in the food processor. This has given it a grainier texture than I’d like.

 

I did struggle a little with adding the chocolate at the end to make the flecks in the recipe. The ice cream had gone quite firm so instead we have choc chunks, but I don’t mind that. Overall I find this a beautiful decadent ice cream, with a lovely fig flavour.
