We loved making this caramelised banana ice cream so much we’ve made it twice, and doubled the recipe. It’s great for using up leftover over ripe bananas. You cook the bananas in sugar and butter in the oven before blending up with the standard ice cream ingredients. It uses less cream and sugar than many ice creams, and gives a great creamy texture. The kids loved it, it’s strong but we quite enjoy the flavour too. This is adapted from the Perfect scoop cookbook which we’ve just bought. Looking forward to seeing what other recipes we can try from the book.
